Whole Wheat Cinnamon Applesauce Muffins

What do you do when your Weather Channel app says it feels like -22 outside?  You bake, of course!

Having an almost 3 year old and an almost 1 year old cooped up in a house for too long is just a recipe for disaster.  And my house is a disaster.  We are juggling laundry, dishes, keeping the boys entertained, and sprucing up the boys’ bathroom.  And typing really hurts my fingers because I have split fingers from the air being so dry!  Real life, y’all.  When is spring??

So, today, to keep from going stir crazy, we baked muffins!  These muffins sure are tasty; with just the right amount of cinnamon/applesauce/honey flavor.  I adapted it (greatly) from this recipe, to make it healthier.

Whole Wheat Cinnamon Applesauce Muffins

Whole Wheat Cinnamon Applesauce Muffins

1 1/2 cups whole wheat flour (I use white whole wheat)

1 1/2 tsp baking powder

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

2 large eggs

1/2 cup honey

1 1/2 cups applesauce

Preheat oven to 400*, grease muffin pan or line with muffin cups.  I use silicone baking cups and they are awesome!

Whisk together dry ingredients in a large bowl.  In a separate bowl, whisk together eggs and honey until well combined.  Add in applesauce.

Fold wet ingredients into flour mixture until flour is just moistened.

Fill muffin cups and bake for about 18 minutes or until golden brown.  Let cool in tin for about 5 minutes after baking then, enjoy!

If I was a food blogger, I’d probably have some cinnamon sticks or something to use as photo props.  Instead, I have neon muffin tin liners and I think they are pretty fun! 🙂

I hope you guys are staying warm wherever you are!  I’m praying for a heat wave!  I’ll take anything over 30 degrees right now.  I can’t wait to share the boys’ bathroom with you guys when it gets finished!  It’s a tricky spot to work, since it butts up to Christian’s room, so we can’t really work after bed or during nap (prime DIY hours), so we are squeezing stuff in between dinner and bath!
