Energy Bites Recipe & a Mini Life Update!

Hey there friends!

We are in full blown fall mode over here!  Halloween candy munchin’, warm apple cider sippin’, pumpkin carving fun and cozy sweaters!  Follow me on Instagram to see more of our fun fall activities!  Before I share the energy bites recipe with you, I thought I would give you (very) mini update on our lives!

 

Alex has his Kindergarten Halloween party tomorrow and he is VERY excited!  He is sporting a spider costume found by yours truly at our local Goodwill for $6!  Thankyouverymuch.  Christian is being Thomas the Train (of course) which I also found at Goodwill for less than $5!  He is pretty pumped about attending his preschool halloween party tomorrow as well! Madi will be the most adorable little flower for trick-or-treat tomorrow night.  It’s adorable.  I will update with photos! 

It’s hard to believe that both boys are in school now.  The days can get pretty busy around here!  Especially now that Madi is basically sprinting everywhere and John has started training for Ironman Texas 2018! Can you believe it will have been 3 years between his two Ironmans?  You can read all about his first Ironman experience here.

I’m going to try to do better this time around about documenting my side of the training because, yes, I have to do a lot as well!  One of the biggest things is feeding his growing appetite.  He is already working out at least an hour per day along with multiple hours on the weekend and he is only in week two of training.  Working out that much means only one thing.  My grocery bill is going to go up.  Sorry, hunny.

This time around, he will be training on a fully plant based diet (we weren’t yet plant based during his last Ironman training).  There will be a definite learning curve, but I think it will be a flawless transition to training on a plant based diet.  Protein comes from SO MANY plant sources so it should be very easy to find great meal and snack ideas!

One thing John has requested I make and have on hand constantly is energy bites.  There are a million recipes out there for different energy bites and I bet they are all delicious.  I mean, when you mix chocolate, peanut butter and maple syrup, can it be wrong??  Nope.

I wanted to share with you all the recipe we use and love!  Our kids can’t get enough of them and I have had to learn to control myself when eating them.  They taste like cookies, so be careful!

I adapted this from The Marathon Mom in order to make it vegan and use the ingredients we usually have on hand!

Oatmeal Chocolate Chip Energy Bites
Protein and fiber packed delicious energy bites.

Ingredients
  1. 2 C Rolled Oats
  2. 1 C Quick Oats
  3. 1 C Unsweetened Shredded Coconut
  4. 1 C Ground Chia Seeds
  5. 1/2 C Dairy Free Chocolate Chips (I use Enjoy Life Semi-Sweet Mini Chips)
  6. 1 C Peanut Butter ( I use one ingredient peanut butter)
  7. 2/3 C Maple Syrup
  8. 2 tsp Vanilla (optional)
Instructions
  1. Combine oats, coconut, chia seeds, and chocolate chips in a large mixing bowl.
  2. Add peanut butter, maple syrup and vanilla to dry ingredients and stir. This takes a little muscle, but stick with it! I find that smashing the peanut butter helps break it up and mix with the dry ingredients more easily.
  3. If it seems like your mixture is too dry, feel free to add more peanut butter and/or maple syrup. Mixture should fairly easily form a ball when squished in your hands.
  4. Roll into 2 inch balls. I was able to get about 50 energy bites from this batch.
